Oshibako Mold for Japanese Oshizushi in Cypress Wood
This oshibako sushi mold lets you make six oshizushi at a time. Originally from Fukuoka, oshizushi is pressed sushi, often featuring a layer of fish between two layers of rice, then cut into rectangles. At home, you can customize the flavors and toppings to easily create beautiful pressed sushi. Here’s how:
- Lightly moisten the mold to prevent the rice from sticking (or use plastic wrap).
- Place a layer of vinegared rice in the bottom of the mold and press lightly with the push lid.
- Add your chosen filling, either sandwiched between two layers of rice or on top. Press down again if needed.
- Run a knife blade through the slots in the mold to cut your sushi into six equal parts.
- Lift the wooden frame to unmold your oshizushi. That’s it!
Enjoy your sushi immediately, with friends, or pack them in a bento box for lunch. Cypress wood adds a pleasant fragrance and helps absorb excess moisture. After use, rinse the mold with lukewarm water and let it air dry. Cypress resin has antibacterial and antifungal properties.
